A few weeks ago a friend of mine mentioned a bacon-themed bar in Brookfield. Of course my response was, "I'm just hearing of this now?"

Clearly this was something I needed to check out.

If you're looking for bacon, then the Saloon on Calhoun with Bacon is the place to go.

The bacon bar opened its doors at 17000 W. Capitol Drive on Sept. 21, 2011. Owner Dave Dayler wanted to give the saloon a complete makeover and a fresh start from the former saloon that had been in the location — and bacon was the tasty hook to make that happen.

"When I took over the business, I wanted to be sure neighbors knew that the old saloon was going to be getting better," Dayler said. "And seeing as how everything is better with bacon, I decided it would be an ideal theme."

If you didn't know the theme was bacon, you'd quickly realize it when you walked in. The scent of bacon hangs in the air like a thick cut of Patrick Cudahy's Sweet Applewood cooking on your stove.

Want bacon with your Bloody Mary? The saloon offers a free bacon happy hour weekdays from 4 to 7 p.m. Heck, they'll even put the bacon in your Bloody Mary, made with bacon vodka if you like.

To further indulge your bacon fetish, you might want to try the bacon-wrapped water chestnuts, bacon-wrapped mozzarella sticks, broccoli bacon cheddar bites, bacon barbecue wings, and, for desert, the deep-fried brownie bites that are served hot and soft with a crispy bacon wrapper.
