Three new restaurants announced for Wauwatosa's Mayfair Collection

Three new restaurants are scheduled to open at The Mayfair Collection by late summer or early fall of this year.

Milwaukee-based restaurant group Hospitality Democracy has announced it will open three concepts inside a 6,280-square-foot free-standing building at the shopping center. The restaurants include AJ Bombers, Smoke Shack and Holey Moley Coffee + Doughnuts.

The Mayfair Collection is a large shopping center located north of Burleigh Street, just east of Highway 45 in Wauwatosa.

"We could not be more pleased to join in the retail excitement that is happening in Wauwatosa," said Joe Sorge, owner of Hospitality Democracy, in a statement. "We feel our restaurants are the perfect addition to the current offerings at The Mayfair Collection. Our new locations are perfectly placed, just in front of the new Hilton Homewood Suites hotel and an attached parking garage," said Joe Sorge, owner of Hospitality Democracy."

AJ Bombers is a burger bar known for its peanuts, burgers and beer. It has locations in downtown Milwaukee, downtown Madison and seasonal outposts at Miller Park and Summerfest. The Wauwatosa location will feature the same "Rube Goldberg meets Willy Wonka and the Chocolate Factory" design and functionality as the original restaurant, according to a news release.

Popular Milwaukee barbecue spot in the Third Ward, Smoke Shack, is planned for the eastern half of the building at The Mayfair Collection. The Wauwatosa restaurant will include a seasonal, outdoor patio and bar area built with reclaimed wood in a rustic aesthetic similar to that of Smoke Shack's original location. Customers can order dry-rubbed, slow smoked meat and house-made barbecue sauces and sides.

Finally, Holey Moley Coffee + Doughnuts will offer customers scratch-made doughnuts in a range of styles including cake, old-fashioneds, yeast raised, filled, fritters and doughnut holes in a counter-service setting. The eatery offers a number of seasonal flavors and a wide variety of vegan and gluten-friendly options. Further, the Wauwatosa location will offer Doughnut Custard Sandwiches. Holey Moley's first location opened in 2014 in Milwaukee's Third Ward neighborhood.

All three new restaurants will offer a number of parking spots for pickup and catering orders.

Brenton Schrader, a spokesperson for HSA Commercial Real Estate, the entity developing the shopping center, said his company is "excited" to welcome Hospitality Democracy onboard, adding the new additions will build a critical mass of restaurants in Wauwatosa, marking The Mayfair Collection as a food destination.

Three other restaurants — a new pub/tavern, a taco restaurant and a French bistro — owned by Phoenix Development Partners but operated by Bartolotta Restaurants are also scheduled to open this summer.
